Broken Ganoderma lucidum spores are Chinese traditional medicine, can anti-aging, enhance immunity and have other healthy functions. Broken Ganoderma lucidum spores were widely used in the functional food and phannaceutical industries. Broken technology made spores had high bioavailability, but breaking the outer wall of Ganoderma lucidum spores result in their poor stability, light, oxygen and temperature and other environmental factors could accelerate the oxidative degradation, lead to they limited in practical application. This study aimed to the matter of broken Ganoderma lucidum spores in the market, reconstructed the spore wall of Ganoderma lucidum, and the products were also researched.This study determined the optimum conditions by single factor experiment and response surface methodology:hydroxypropyl methyl cellulose and soy protein isolates were selected as the material of outer wall of Ganoderma lucidum spores, and the mass ratio was 2:1;the ratio of the outer wall of Ganoderma lucidum spores and the core material of the raw material was 2:1,sucrose esters and monoglycerides were selected as solubilizer, their ratio was 2:1,the addition was 0.5%,the solid content was 30%, the pressure of homogeneity hanging equably was 40 MPa, twice. The method to reconstruct the spore wall of Ganoderma lucidum was spray-dryed, the inlet air temperature was 220℃, the outlet air was 105℃,and the efficiency of made the spore wall reconstructed broken Ganoderma lucidum spores microencapsulation was 90.2%.The evaluation at the indexes of spore wall reconstructed broken Ganoderma lucidum spores suggested that the moisture content was 4.89%, dried, granular powder. The average granularity was 5.89μm, the density was 0.072g/cm3, the angle of stacking was 18.96°, size was uniform. Fluffy and smooth, pure smell, dark brown, character was good. The specific surface area of spore wall reconstructed broken Ganoderma lucidum spores was 0.7595m2/g, Zeta potential was -6.46mV, less than raw broken Ganoderma lucidum spores specific surface area and Zeta potential, indicatied that Ganoderma lucidum spores after reconstructed spore wall had better stability than raw materials. Spore wall reconstructed broken Ganoderma lucidum spores were uneasy reunion, and good dispersion. This study determined the products peroxide value of the product and raw broken Ganoderma lucidum spore.20℃ experimental products obtained peroxide value was 2.07meq/kg,5 months storage at room temperature after the peroxide value was 3.43meq/kg, far below the peroxide value of raw materials, indicated that Ganoderma lucidum spore powder after reconstructed had good resistance to oxidation, to facilitate storage, greatly increased the shelf life. Artificial sporoderm was beneficial for Ganoderma lucidum spores products’ dispersion and compatibility. Spore wall reconstructed broken Ganoderma lucidum spores could be used in medicine and health products. Spore wall reconstructed broken Ganoderma lucidum spores had good development and application prospects in the functional food and pharmaceutical industry.
